Introduction to ELA Adult Learning:

ELA delivers high quality apprenticeships and short courses. We have expertise across a range of education, care and catering settings, such as early years, private and public schools, special needs provisions, residential care settings, cafes and casual dining. We aspire to support committed and passionate education, care and hospitality workers to achieve their goals. Our team has a huge passion for learning that makes a difference, and not just providing training for training’s sake.

Level 2 Production Chef:

● Reporting to the Senior Production chef or appropriate line manager.
● Likely to work with centrally developed standardised recipes and menus, producing food often in high volumes.
● They apply highly methodical organisational skills, energy, accuracy, attention to detail and are mindful of the importance of sustainability and protecting the environment.

Relevant settings include:

Production chefs work as part of a team in time-bound and often challenging kitchen environments, for example:

● Schools
● Hospitals
● The Armed Forces
● Care homes
● High street casual dining
● Pub kitchens

Through this Apprenticeship, the Production Chef will learn to

Maintain excellent standards of personal, food and kitchen hygiene

Ensure compliance to procedures, menu specifications and recipes

Produce food meeting portion controls, and budgetary constraints

Adapt and produce dishes to meet special dietary, religious and allergenic requirements

Follow, complete and maintain production schedules, legislative and quality standard documentation

Use specialist kitchen equipment

Communicate internally and externally with customers and colleagues

Commit to personal development activities

End-Point Assessment

On-demand test (multiple choice), Practical Observation and Professional Discussion

Specialist Skills Tutor

Level 2 Functional Skills Maths and English (if not already achieved) assessed and delivered online, supported by a Specialist Functional Skills Tutor and group workshops

Commitment Required from Learner and Employer

To meet deadlines agreed and set by the Tutor

Access to relevant activities in the workplace

Access to a work-based Mentor and shadowing opportunities

Learner and Employer to attend 8-10 weekly progress reviews

Access to 20% ‘Off the Job Training’ Time

Attendance at monthly 1-1 learning sessions

Time allowed for the Apprentice to complete assignments

Participate in skills-based learning and virtual workshop

Compilation of work-based portfolio of evidence
